Bread with Caramelized Onion

Today is my day off what else I can do other than baking my bread. It’s a kind of meditation. I start to make some coffee and while the coffee jar is getting full I’m starting to prepare.

 My original plan was to use my lovely starter the first time that was sitting in the fridge after 8 days of feeding. I was so excited to try it but I forgot to take it out fo the fridge the night before.

By the professionals, you have to take the amount that you want to use and feed it and keep it on room temperature the night before.

I found some old dough in the fridge that was about 10 days old from my previous baking. For my recipe, I should use 250 g but I had only 170. DAMM

Well, I added my cold starter to the old dough and I added a pinch of yeast just to be on a safe side, and it worked. It worked so well that I couldn’t believe it. Improvising the best part of baking and cooking. I felt that I innovated something / even I know that’s not the case/

The smell and texture were amazing. I couldn’t get over it, how crispy outside and soft inside.

Ingredients
  

  • 300g or 2 1/2 cup Spelt Flour
  • 100g or 3/4 cup Dark Rye Flour
  • 100g or 3/4 cup White Bread Flour
  • 250g Starter "old dough" approximately 1 1/4 cup
  • 270ml or 1.14 cup Water
  • 1/4 tsp Dry yeast
  • 1 tsp Coconut sugar or Brown sugar
  • 1 tbsp Salt
  • 2 tbsp Olive oil
  • 300g or 1 1/4 cup Caramelized Onion sliced
  • 2 tbsp Butter
  • 1 tbsp Everything Bagel Seasoning optional

Instructions
 

  • Cut the onion in half and slice it up thinly. Saute the onion on 2 tbsp of butter until it's light golden brown.
  • Put all the ingredients, except the onion in the mixer bowl and knead it for 20 minutes. Close to the end, I added the cooled onion into the mixture.
  • I put it in a slightly oiled rising bowl. After 20 minutes re-knead it and wait till double-sized.
  • I shaped it to a loaf and put it in the rising basket. Cover it with a towel and wait till double-sized. Approximately 1 hour. After that used a sharp blade and cut 3 lines on the top. From here wait an additional 10-15 minutes. Spray it with water and sprinkle with everything bagel mixture if you desire.
  • Meanwhile, preheat the oven for 445F with a dutch oven. I cut parchment paper into the shape put my bread on it. Take out the dutch oven and spray the lid with water. Lift the bread dough up with the parchment paper and put it in the dutch oven. Please be careful very hot. Spray inside the dutch oven put the sprayed lid on and put it in the oven.
  • Bake it for 50-55 minutes. The last 5-10 minutes take the lid off. Put it the cooling rank and wait till cools off. That's the hardest part lol.
