Creamy Cauliflower Soup with Sour Cream

In rare form, it’s snowing in Georgia… in February. Snowfall is typically reserved for December or January in this area of the country, but nevertheless it’s a nice finale to a mild winter this year. 

As such, I decided to commemorate the event with a nice warm soup concocted from my cabin-fevered mind. I was going for something white in its base as an homage to the rare annual event, yet still allowing colors and flavors to shine through – much like how North Georgia snow cover allows the deepest, richest colors to shine through its typically thin layer.

Voila! We have our cauliflower soup with sour cream. In Hungary, people making this soup pretty often, but my mom for somehow someway never made it. She just made it as a regular veggies soup loaded with cauliflower.

Ingredients
  

  • 1/2 cup Chopped onion
  • 2 cloves Chopped Garlic
  • 1 medium Chopped Cauliflower
  • 3 medium Sliced Carrots
  • 1 tbsp Spelt Flour
  • 1 cup Sour Cream
  • 3 tbsp Oil
  • 1 tbsp Bouillon powder no msg preferred or cube
  • 1/4 tsp White pepper
  • 1 tsp Salt
  • 4 cup Water

Instructions
 

  • In a medium pot, heat the oil and add the onion and the garlic. Add the salt and saute them for a couple of minutes.
  • Add the spelt flour and wait until the flour turns golden brown and add about half a cup of water. Stir it until nice and smooth.
  • Add the sliced carrots, the bouillon powder, and white pepper and cover it for 4 to 5 minutes.
  • Add the cauliflower and add the 4 cups of water. Cover it and cook it until the veggies are tender.
  • In one cup of sour cream add about a cup of hot broth. Stir it together until smooth and add slowly to the soup. This step is important to make sure the could sour cream not getting lumpy in the hot soup.
  • Wait until boil once and the soup is DONE.
