2Apples Use fuji for sweeter flavor or granny smith for mild flavor.
1 3/4 cupSpelt Flour
2tspBaking Soda
2tspGround Cinnamon
2/3 cup Stevia plus for sprinkling
1/2 cup Honey
1/4 cup Plain Greek Yogurt
1/2 cupFlavorless Vegetable Oil
2Eggs
1/2cup Raw Almondschopped
Instructions
Preheat the oven to 400 F.
Peel and core the apples, then chop into small dices and put them in a bowl.
Line the muffin pan with paper muffin cups. Measure the flour the baking powder, and 1 tsp of ground cinnamon into another bowl.
Whisk together the 2/3 cup of stevia, the honey, yogurt, vegetable oil, and eggs in another separate bowl.
Chop the almonds and add half of them to the flour mixture. Put the other half of the almonds into a small bowl with the second tsp fo ground cinnamon and the 4 extra tsp fo stevia. This will make the topping for the muffin.
Now, mix the wet ingredients into the dry ingredients. Add the chopped apples and stir to combine but don't over mix.
Spoon this bumpy batter into the paper muffin cups, then sprinkle the rubbly topping mixture over them.
Put the pan into the preheated oven and cook for approximately 25 minutes, or until ready (check the muffins with a toothpick until it's ready)
Remove the pan from the oven and let it stand for about 5 minutes before taking out the muffins and placing them on the cooling rack.
Notes
Of course you can use any type of sweetener you like or brown sugar. I had stevia at home in that point of time.
